The mainstream media may deserve much of criticism it gets for ignoring complex health stories.
Absent a 1) visible, horrible illness and 2) a desirable, sentimental victim, many complex issues go unreported.
Which is why the feature in today’s Times about the decades-long battle of the salt industry to fight regulation is so notable. I don’t know enough about the issue to fully evaluate the content, but I do know that this is something that, at one time, would have never made it into the gray lady.
